Ok I have to admit, there was a phase in life where I made this at least once a week for Rashawn and I because it is just that good and that easy. This recipe is full of veggies to make up for the mini fried chicken too!

You can always add more or less veggies to this depending on what you have on hand as well. Add in green onions leave out the shallot, no jalapeno and some bamboo shoots instead - truly make it how you like it!

If you truly wanted this recipe to be its healthiest then you can always pan fry the chicken in some olive or sesame oil instead. I have just found that the sauce really absorbs into the crispy chicken when cooked in the oil and cornstarch.

We eat 90% of our meals with white jasmine rice, but you can always eat as is, with brown rice, dumplings, or even lo-mein noodles!
